Turkey! Turkey Soup!

Happy Thanksgiving to all my readers!
Here's a green idea...after your holiday turkey feast, get some more miles out of your turkey by making soup from the bones & leftover meat. This simple turkey soup is a wonderful meal that will warm your heart! Spice it up if you prefer or vary the vegetables you add. Enjoy!
Turkey Soup
Bones & leftover meat from turkey
2 quarts of water
3-4 stalks of celery chopped
1 large onion chopped
2-3 large carrots, peeled & chopped
2 bay leaves
1 clove of garlic crushed
Fresh herbs—parsley, thyme (tied in a little bundle with string)
1/8 tsp. paprika
Kosher salt & pepper corns to taste

Put turkey bones in a large pot with water and bring to a boil. Reduce and simmer for about 1 hour. Remove bones by using a slotted spoon or by straining the broth. Discard the bones. Return broth to the pot and add turkey meat as well as remaining items. Simmer for 30 minutes. At the last 15 minutes in cooking, add 1 cup of either cooked pasta (such as orzo) or rice. Serve immediately.
