a great salad salad recipe for a picnic

(I would have had a picture, but they ate it before I got one! :))

Every time I make this family favorite salad recipe, it reminds me of going to graduation parties and summer picnics as a child. This is super easy & super fast to make. You probably have everything you need in the don't have to grow your own lettuce...unless you want to! :)

Seven Layer Salad

  • 4-5 cups shredded lettuce--you can use one iceberg or I use two romaine hearts because it is better for you (ignore the fact that the mayo & bacon totally cross out healthy though!)
  • 1/2 cup coarsely chopped celery
  • 3/4 cup finely chopped onion
  • 5 oz. green peas, cooked, drained & cooled
  • 1 1/2 cup Helmann's mayo (use the light to save calories!)
  • 1 Tablespoon sugar
  • 1 1/2 cup shredded cheddar
  • 4 strips of bacon, crispy & crumbled

In a large glass bowl or 9 x 13 inch serving pan, layer half of: lettuce, celery, onion, and peas. Repeat layers ending with the peas. In a small mixing bowl, combine mayo and sugar until the sugar is dissolved. Spread the mayo mixture over the salad layers. Sprinkle top evenly with the cheese and garnish with bacon. Refrigerate. It is best if you make this the day before or at least 4 hours prior to serving.
